Jahrhunderts verbesserte sich die Verfügbarkeit von Lebensmitteln in Industrieländern derart, dass die zuvor periodisch wiederkehrenden Hungersnöte überwunden waren. Nicht-Essen stand nicht länger allein für Knappheit und Armut, sondern bekam als Ausdruck bewussten Handelns eine neue Bedeutung. Gesellschaften begannen, sich entlang des Essensverzichts sozial und kulturell zu organisieren. Diäthalten und Schlanksein, Hungerstreik und Vegetarismus, Knappheit und Mangel, Gesundheitsvorsorge und Rationalisierung sind nur einige der im Band behandelten Themen, in denen das Nicht-Essen historisch relevant wurde. Alle Spielarten des Nicht-Essens erhellen Praktiken der Selbstverantwortung, staatliche Regulierung sowie individuelle und kollektive Sinnbildung und ermöglichen so, gesellschaftliche Wandlungsprozesse zu entziffern.Der Band schreibt mit seinem kulturhistorischen Zugriff auf das „Nicht-Essen“ ein neues Kapitel der Essensgeschichte. Er richtet sich sowohl an Historiker und Historikerinnen als auch an all diejenigen Leserinnen und Leser, die sich für das Verhältnis von Individuum, Nahrung und Gesellschaft interessieren. | ||
